Peach Oatmeal Crumb Bars

Peach oatmeal crumb bars have an oatmeal crumb base, soft peach middle, and a crumb top. It works great as a snack, treat, or quick breakfast.

These bars were a huge hit with my two young children! I always love baking with fruit, for some reason it makes me think the treat is “healthy”. You’ll be happy to know that this recipe is so easy to make! I did it with the help of my two young children is that they ate a good 1/4 cup worth of the crumble mixture before I got to add it on top of the bars.

How To Make The Bars

Preheat oven to 375F and line a square 9×9 baking pan with parchment paper.

Peel and dice your peaches and set aside in a medium sized mixing bowl.

In a large bowl whisk together the rolled oats, brown sugar, flour, and cinnamon. Next, add the melted butter into the dry ingredients and mix till everything is combined. It will have crumbly texture.

Set aside 1/2 C of the crumb mixture and pour the rest into your pan. Then, evenly press the crumb mixture down with your hands to form a solid crust.

To the diced peaches add in the white sugar and cornstarch. Mix until all dry ingredients are dissolved. Next, spread the peach mixture over the crumb base in your pan. Top with the remaining 1/2 of crumb mixture. You just want to sprinkle it above the peaches.

Bake for 28 minutes or the edges are golden brown. Let fully cool in the pan before cutting into bars.

How to Store The Bars

The bars should be stored in an airtight container at room temperature. If stored properly the bars keep well for three days.

  • 2 C diced peaches
  • 1 tsp cornstarch
  • 1 tbsp white sugar
  • 1 & 1/4 C rolled oats
  • 3/4 C brown sugar
  • 1 C all purpose flour
  • 1/2 tsp ground cinnamon
  • 3/4 C melted butter

Instructions
