Sprinkle Sugar Cookie Bars

These beautiful and scrumptious sprinkle sugar cookie bars are chewy on the inside and have a crips top and bottom layer. They are super easy to make and they only uses one bowl. A delicious sugar cookie in bar form.

My toddlers and I love baking with sprinkles! I love how fun they make baked goods and my little ones love playing with them. My 1.5 year old calls sprinkles “fings”. Instead of our usual funfetti cookies we decided to try something different, Sugar Cookie Bars.

How to Make Sugar Cookie Bars

To start preheat the oven to 350 and line a 9×9 square baking pan with parchment paper. Why use parchment paper? It keeps the bars from sticking to the pan and allows you to easily remove them from the pan.

In a large bowl beat softened butter and sugar until light an fluffy, this usually takes 2-3 minutes. You can make this in a stand mixer with the paddle attachment on, in a bowl using a hand mixer, or by hand.

Add in egg, egg yolk, and vanilla extract and mix until well combined. Next, add the salt and flour. Mix until well combined. Lastly, fold in the sprinkles.

Once everything is combined pour the batter into your lined baking pan. Smooth and spread the mixture till it is evenly covers the entire pan. You can smooth it with a spatula but I mind using my hands works best. Lastly, add a few more sprinkles on top, this is optional but I love the way they look.

Bake for 25 minutes or until the edges are golden brown and middle is set. Allow the bars to fully cool in the pan before removing and slicing. Store bars in an airtight container at room temperature.

Ingredients
  

  • 1 C butter softened
  • 1 & 1/4 C white sugar
  • 2 tsp vanilla extract
  • 1 large egg + 1 large egg yolk
  • 1/4 tsp salt
  • 1 & 3/4 C all purpose flour spooned and levelled
  • 1/2 C sprinkles I like to use jimmies- they're the long kind

Instructions
 

  • Preheat oven to 350 F and line a 9×9 square baking pan with parchment paper.
  • In a large bowl beat softened butter and sugar until light an fluffy, this usually takes 2-3 minutes.
  • Add in egg, egg yolk, and vanilla extract and mix until well combined.
  • Add in flour and salt and mix until combined.
  • Fold in the sprinkles.
  • Once everything is combined pour the batter into your lined baking pan. Smooth and spread the mixture till it is evenly covers the entire pan.
  • Add a few more sprinkles on top (optional).
  • Bake for 25-28 minutes or until the edges are golden brown and middle is set.
  • Fully cool before slicing into bars.
  • Enjoy!

Notes

Store at room temperature in an air tight container. 
If baking in a light metal baking dish you made need to bake a little longer.
