The best chewy caramel turtle brownies! A decadent brownie full of chewy caramel pieces and pecans baked inside. Topped with caramel sauce, chocolate, and pecans. If you love Turtles Chocolate these brownies will be perfect for you!

I made these brownies with the help of my two young children. Brownies seem to be their favourite thing to bake, I believe it’s because of all the chocolate! I recently was able to bring them to a small family get together, one of the first since Covid. These brownies were a huge hit! Making turtle brownies is definitely a way to upgrade plain brownies into a decadent dessert!

How to Make These Turtle Brownies

Preheat oven to 350F and line a 8×8 inch square baking pan with parchment paper. You want to make sure the parchment overs hangs a little, this allows you to easily remove the brownies from the pan.

Brownie Batter

Chop and melt the bakers chocolate in the microwave. Do this by microwaving in 20 second increments and stirring in between.

Chop caramel squares into small pieces, I find its easiest to cut them with kitchen scissors.Add caramel pieces, chocolate chips, and pecans into a medium sized bowl. Mix together and then set bowl aside.

caramel pieces, chopped pecans, and chocolate chips

In a large mixing bowl combine melted butter and sugar and whisk by hand until smooth. Add in the eggs and vanilla and vigorously mix for a few minutes. Mixing the eggs well creates that shiny crackle top on the brownies.

Pour in the melted chocolate and whisk until mixture is well combined. Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients until combined. Do not over mix.

Fold in the mixture of caramel pieces, chocolate chips, and pecans. Pour batter into the lined pan and spread evenly.

Bake for 28-30 minutes or until edges are stiff and middle is set. Allow brownies to fully cool to room temperature before adding the toppings and slicing.

Caramel Sauce

In a medium sized microwave bowl add the caramel squares and heavy cream. Microwave in 20 second increments, stirring in between, until melted and combined.

Drizzle the caramel on top of the cooled brownies. Then top with chocolate chips and pecans. I then like to drizzle a little more caramel sauce on top.

Tips for Making Perfect Turtle Brownies

  • Use room temperature eggs. They break down easier and allow them to blend better into the batter.
  • If you forgot to take your eggs out of the fridge, no worries, just run them under warm water for a few minutes.
  • Once eggs are added to the mixture, whisk for a couple of minutes. This breaks down the eggs, adds air, and gives the brownies that perfect crinkle top.
  • Be sure to mix everything by hand.
  • It’s better to be under baked than over baked with brownies.

Red Velvet Brownies

Red Velvet Brownies

Red velvet brownies are perfect for Valentines Day, Christmas, or anytime you want a delicious treat. They’re chocolaty, chewy, and full of white chocolate chips. They use one bowl and are easy to make!

I made them a few weeks ago with my toddlers and they loved them! My kids like anything that uses food colouring and chocolate chips.

How to Make Red Velvet Brownies

Start by preheating your oven to 350F and line a 9×9 baking pan with parchment paper. The parchment paper should over hang on the edges slightly to allow you to easily remove the brownies from the pan.

Chop the bakers chocolate and place in a microwave safe bowl. Melt in the microwave by stopping and stirring the chocolate in 20 second increments.

In a large mixing bowl combine melted butter and sugar and whisk by hand until smooth. Add in the eggs, red food colouring, and vanilla and continue to mix. You want the mixture to be very smooth and have no lumps.

Pour in the melted chocolate and whisk until mixture is well combined. Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients until combined. Do not over mix.

Fold in the chocolate chips. Pour batter into the lined pan and spread evenly. Bake for 27 minutes or until the top is set. You do not want to over bake the brownies. Allow brownies to fully cool to room temperature before slicing.

Tips for Making Brownies

Do not over mix the batter, over mixing causes the brownies to be dense.

Use room temperature eggs. Eggs at room temperature break down more easily. If you forgot to take your eggs out of the fridge to warm up don’t worry. Just run them under warm water for a few minutes.

Do not over bake. Brownies are better on the under baked side. Once the edges are stiff and the centre is set remove them from the oven.

Wait until completely cooled to slice.

Bake them on your own or bake them with your kids, either way I’m sure you’ll love with these Red Velvet Brownies!

Brownies

There are countless different brownie recipes out there but I believe I have finally created the perfect one. These chewy homemade brownies have become a favourite in our household. These brownies have a chewy texture rather than a super fudgy texture.

Baking brownies with my two toddlers is never easy. The two of them usually get a little dirty whenever we bake but when I added in the element of chocolate the mess was taken to a new level. There were splatters on the counter, the cupboards, the floor, and of course my little ones.

We do have a lot of fun baking them together. They really enjoy using the sifter. They like dumping the dry ingredients in and shaking it into the bowl.

For me, baking with my little ones is always about doing a fun activity and having experiences together. Yes, there is always a mess but getting to share my favourite hobby with my two favourite people is the best thing in the world! The other bonus is when nap time finally rolls around I get to enjoy a fresh brownie with a large and well deserved cup of coffee!
