These Cookie Monster Cookies are perfect for Sesame Street themed parties. A blue chewy sugar cookie full of chocolate chip cookies pieces and a whole mini chocolate chip cookie on top.

I have to say these might have been the coolest cookies I have ever made. I brought them to a family gathering and I’m pretty sure I am now the coolest Aunt amongst my nephews. The kids loved the cookies and thought they were so fun!

These cookies are also very easy to make! My two young children helped me make a batch and were very impressed with the blue colour. A little trick, if you want to bake with your kids too, have some extra mini chocolate chip cookies out. My kids kept trying to take the cookie chunks out of the dough to eat.

HOW TO MAKE THESE COOKIES

Start by preheating the oven to 350 F and lining baking trays with parchment paper.

Next, cut your mini chips ahoy chocolate chip cookies into quarters until you have 1 cup worth. Set aside.

In a large bowl or in a stand mixer with the paddle attachment on beat butter and white sugar together until light and fluffy. This usually takes about 3 minutes. Add in the egg, blue food colouring, and vanilla and mix till well incorporated.

In a separate large bowl whisk flour, baking soda, baking powder, and salt. Pour the dry ingredients into the wet and mix till combined. If you are not happy with your blue colouring you can add some more blue food colouring in at this point and continue mixing until you have your desired colour. Fold in the chopped mini chocolate chip cookies.

Scoop 3 tbsp worth of dough into a ball and place on the baking trays 2 inches apart. Add a whole mini chocolate chip cookie in the top centre of each cookie dough ball, gently pressing it in place.

Bake cookies for 9-10 minutes or until bottoms are golden brown. Cool on the cookie tray for a few minutes before moving to a wire rack to cool completely.

CAN I MAKE THE COOKIES SMALLER?

Yes, you can definitely make these cookies half the original size. Bake them for 7-8 minutes or until the bottoms are golden brown.

How To Store These Cookies

Like most cookies, they should be stored in an airtight container or zip lock bag at room temperature. The cookies should stay fresh if stored properly for four days.

Who doesn’t love those Two Bite Brownies!? Did you know that they’re super easy to make from home? They take less time to bake than regular brownies and are even more tasty than the store bought version.

My two young children love baking brownies, I think it’s because of all the chocolate. My little ones loved how “cute” these chewy brownie bites were.

How to Make Brownie Bites

Preheat oven to 350F and grease mini muffin pan with spray or cooking oil.

Chop the bakers chocolate and microwave in 15 second increments, stirring in between, until melted.

In a large mixing bowl combine melted butter and sugar. Whisk by hand until smooth. Add in the eggs and vanilla and continue to mix. Whisk vigorously, by hand, until eggs are well incorporated and mixture is smooth. Do this for a few minutes. Pour in the melted chocolate and whisk until mixture is well combined.

Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients just until combined. Do not over mix. Fold in the chocolate chips.

Scoop 1.5 tablespoons worth of batter into each muffin tin. I like to use a small cookie scoop. Once all tins are filled, hit the pan a few times on the counter to help spread the batter.

Cook brownies for 11-13 minutes or until the tops are shiny and crinkled. You don’t want to over bake. Let the brownie bites cool in the pan until they are room temperature. Gently run a knife around the edges to pop them out.

Tips for Perfect Brownie Bites

  • Use room temperature eggs. They break down easier and allow them to blend better into the batter.
  • If you forgot to take your eggs out of the fridge, no worries, just run them under warm water for a few minutes.
  • Once eggs are added to the mixture, whisk for a couple of minutes. This breaks down the eggs, adds air, and gives the brownies that perfect crinkle top.
  • When the dry ingredients are added mix just until there are no longer any flour streaks. Over mixing will cause the brownies to be dense and dry.
  • It’s better to be under baked than over baked with brownies.

  • 1/4 C unsweetened cocoa powder
  • 1/2 tsp salt
  • 1 C semi sweet chocolate chips

  • Preheat oven to 350F and grease mini muffin pan with spray or cooking oil.

These peanut butter chocolate chunk cookies are the best peanut butter cookie! Chewy, tasty, and loaded with chocolate chunks.

Peanut butter cookies are always a favourite in my house. This time I added chunks of bakes chocolate to create a chocolate chunk peanut butter cookie. Safe to say they were a hit! My two toddlers always get excited when we get to bake with chocolate.

To get these puddles of chocolate be sure to use a chopped chocolate bar or bakers chocolate, DO NOT USE CHOCOLATE CHIPS. Chocolate chips are designed to hold their shape so you will not get the same outcome.

How to Make These Peanut Butter Cookies

Preheat oven to 350 F and line baking sheets with parchment paper.

Chop the bakers chocolate and set aside. Keep the 8 oz and 3 oz in separate bowls.

In a large bowl or stand mixer beat butter, white sugar, and brown sugar until light and fluffy (usually takes 2-3 minutes). Add in peanut butter and mix until ingredients are well combined. Mix in eggs and vanilla.

In a separate medium sized bowl whisk together flour, baking soda, and salt. Add the dry ingredients to the wet and mix just until no flour streaks remain. Fold in the 8 oz of chopped bakers chocolate.

Scoop dough into 3 tbsp balls and place on the lined cookie sheet 2 inches apart (I usually get 6 cookies per sheet). Add chucks of the set aside 3 oz of chopped chocolate on top of the cookie dough balls.

Bake for 9-11 minutes or until the edges start to turn golden brown. Cookies will still seem raw in the middle but will set after cooling. Cool on pan for a few minutes before moving to a wire wrack to cool fully.

Tips for Making Perfect Peanut Butter Chocolate Chunk Cookies

  • Don’t use chocolate chips. Chocolate chips keep they’re shape so you will not get those melted chocolate pools.
  • Measure flour properly by using a spoon to scoop it into a measuring cup and level it off with your finger or knife.
  • Don’t over bake the cookies. Once the edges are starting to go golden brown the cookies are done. They might still look a little raw in the centre but will stiffen up while cooling.
