Why You’ll Love These Cookies

Lots of chocolate. With a chocolate cookie base that is full of chocolate chips, a homemade chocolate ganache, and chocolate cookie crumbles these cookies are a dream for any chocolate lover.

Easy to make. These cookies use come together easily and with no chill time. I know chocolate ganache can sound intimating, but I promise it’s very simple to do.

Nostalgic treat. Growing up you must have encountered a dirt and worms cake as a child. I know I’ve definitely had a few in my days. These cookies are a new and fun way of enjoying that classic childhood dessert.

They’re just so cute! These cookies are a great treat for kids or Halloween. Not only are they delicious but they look awesome!

Step by Step Instructions

Preheat oven to 350 F and line baking sheet with parchment paper.

Cookie Base

In a medium sized bowl whisk flour, cocoa powder, salt, and baking soda together. Set aside.

In a large bowl or stand mixer with the paddle attachment cream together butter and sugars until light and fluffy. This usually takes a good 3 minutes. Mix in the egg, egg yolk, and vanilla. Add in the dry ingredients and mix till just combined. Add the chocolate chips into the dough and gently fold in with a rubber spatula.

Scoop 3 tbsp worth of the cookie dough and shape into a ball. Place cookie dough balls 2inches apart from each other on the baking sheet. I fit 6 cookies per baking tray.

Bake for 10 minutes or until edges are set. Cool on pan for a few minutes before moving to a wire rack to cool completely.

Chocolate Ganache

Once cookies are completely cooled its time to make the ganache.

In a medium sized microwave safe bowl add the chocolate chips, set aside. In another microwave safe bowl add the heavy cream and heat till just before boiling, (about 45 seconds).

Pour the heated cream over the chocolate chips and let sit for a minute. Mix chocolate and cream together. If there are still chunks of chocolate in the microwave for a few seconds and stir again. The ganache should be completely smooth.

Decorating the Cookies

Evenly spoon the ganache over the tops of the cookies.

Sprinkle some oreo crumbs on top of the ganache. Finish by adding a gummy worm on top, gently pushing it into the ganache.

Let the ganache set before eating. Enjoy!

Storing The Cookies

These cookies should be stored in an airtight container at room temperature. The cookies keep well up to four days.

Can I Make the Cookies Smaller?

Yes, you can the cookies smaller. Instead scoop 1.5 tbsp worth of dough and bake for 8-9 minutes. You will still need the same amount of ganache and chocolate cookie crumbs. You will need 26 smaller gummy worms or you can cut regular sized gummy worms in half.

How to Get Round Cookies

As soon as the baked cookies are pulled from the oven place a round cookie cutter (a little bit large than the cookies) around the cookies and gently swirl it around. This will give your cookie a round shape. If you don’t have a cookie cutter you can use a glass or a jar lid.

My two kids loved making these cookies! They had actually never had Oreo cookies before and it’s safe to say they thought they were amazing! They really enjoyed crushing the cookies and thought it was so cool to add cookies into a cookie dough.

How to Make These Cookies

Start by preheating the oven to 350 F and lining baking trays with parchment paper.

Add 10 oreo cookies into a large zip lock bag and crush until no large pieces remain. Set aside. I like to use a rolling pin to crush them.

In a large bowl or in a stand mixer with the paddle attachment on beat butter and white sugar together until light and fluffy. This usually takes about 3 minutes. Add in the egg and vanilla and mix till well incorporated.

In a separate large bowl whisk flour, baking soda, baking powder, and salt. Pour the dry ingredients into the wet and mix till combined. Fold in the crushed oreo cookies.

Scoop 3 tbsp worth of dough into a ball and place on the baking trays 2 inches apart. Push some extra crushed oreo pieces on top of each cookie dough ball. This is optional but I love the way it looks.

Bake cookies for 9-11 minutes or until bottoms are golden brown. Cool on the cookie tray for a few minutes before moving to a wire rack to cool completely.

Can I Make the Cookies Smaller?

Yes, you can definitely make these cookies half the original size. Bake them for 8 minutes or until the bottoms are golden brown.

How To Store The Cookies

Like most cookies, they should be stored in an airtight container or zip lock bag at room temperature. The cookies should stay fresh if stored properly for four days.

Who doesn’t love those Two Bite Brownies!? Did you know that they’re super easy to make from home? They take less time to bake than regular brownies and are even more tasty than the store bought version.

My two young children love baking brownies, I think it’s because of all the chocolate. My little ones loved how “cute” these chewy brownie bites were.

How to Make Brownie Bites

Preheat oven to 350F and grease mini muffin pan with spray or cooking oil.

Chop the bakers chocolate and microwave in 15 second increments, stirring in between, until melted.

In a large mixing bowl combine melted butter and sugar. Whisk by hand until smooth. Add in the eggs and vanilla and continue to mix. Whisk vigorously, by hand, until eggs are well incorporated and mixture is smooth. Do this for a few minutes. Pour in the melted chocolate and whisk until mixture is well combined.

Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients just until combined. Do not over mix. Fold in the chocolate chips.

Scoop 1.5 tablespoons worth of batter into each muffin tin. I like to use a small cookie scoop. Once all tins are filled, hit the pan a few times on the counter to help spread the batter.

Cook brownies for 11-13 minutes or until the tops are shiny and crinkled. You don’t want to over bake. Let the brownie bites cool in the pan until they are room temperature. Gently run a knife around the edges to pop them out.

Tips for Perfect Brownie Bites

  • Use room temperature eggs. They break down easier and allow them to blend better into the batter.
  • If you forgot to take your eggs out of the fridge, no worries, just run them under warm water for a few minutes.
  • Once eggs are added to the mixture, whisk for a couple of minutes. This breaks down the eggs, adds air, and gives the brownies that perfect crinkle top.
  • When the dry ingredients are added mix just until there are no longer any flour streaks. Over mixing will cause the brownies to be dense and dry.
  • It’s better to be under baked than over baked with brownies.
