STEP BY STEP INSTRUCTIONS
Start by preheating your oven and preparing your loaf pan. Grease loaf pan with butter or cooking spray, then line the long edges and bottom with parchment paper. You want the parchment paper to overhang the long edges a bit, this will allow you to easily remove the bread from the pan.
In a small bowl combine cinnamon, white sugar, and brown sugar. Mix well together and set aside.
In a large bowl cream softened butter together.
Add the egg and until smooth and well combined.
Mix in the mashed bananas.
In a separate bowl whisk together flour, baking soda, and salt.

Fold in the dry ingredients into the wet.
Pour 1/3 of the batter into your loaf pan and spread it evenly. Then add 1/2 of your cinnamon mixture on top, spreading evenly.

Add the remaining batter into the loaf pan and sprinkle the remaining cinnamon sugar mixture on top.
Take a butter knife and gently trace lines horizontally and then vertically to add the swirls, you want the knife to reach the bottom of the pan.
Bake for 55 minutes or until a tooth pick inserted into the centre of the loaf comes out clean.
Let cool in the pan to room temperature before slicing.

Frequently Asked Questions
WHAT DOES SPOONED AND LEVELLED FLOUR MEAN?
Spooned and levelled flour refers to the way of measuring flour. To properly measure flour you should scoop spoonfuls of flour into your measuring cup and then level off the access by scraping with a knife. Scooping the measuring cup directly into your flour causes the flour to compress and you will get more flour than the recipe calls for.
STORING THE BANANA BREAD

I just started following you on IG. The banana bread is in the oven but I just wanted to say I love the way your recipe instructions are written so I don’t have to go back and keep checking ingredient amounts!!

Is your loaf pan size 9x5inch? Can I know the size so I can check the baking time? Thank you! Recipe looks delicious!
Jessie M
Yes, my loaf pan is a 9x5 dark metal pan.

This was amazing! It had a nice banana flavour and wasn't dry at all. Next time I would just add pecans to the batter for a bit of crunch, but great otherwise!
