Frosted sugar cookie blondies are chewy bars full of sprinkles and topped with a thick layer of buttercream. Easy to make and so yummy!

INGREDIENTS
- Butter - I use salted butter and make sure it is at room temperature.
- White sugar
- Vanilla extract
- Eggs- This recipe use one whole large egg at room temperature.
- Flour- All purpose flour works best.
- Salt
- Sprinkles- I prefer the long jimmie style sprinkles.
- Powdered sugar
- Heavy cream- To help soften the buttercream. You can use milk if you do not have cream available.
- Food colouring. I used pink but you can use any colour you like!

Step by Step Instructions
Preheat oven to 350 F and line a 8x8 square baking pan with parchment paper.
Blondies
In a large bowl beat softened butter and sugar until light an fluffy, this usually takes 2-3 minutes.
Add in egg, egg yolk, and vanilla extract and mix until well combined.
Add in flour and salt and mix until combined.
Fold in the sprinkles.

Once everything is combined pour the batter into your lined baking pan. Smooth and spread the mixture till it is evenly covers the entire pan.

Bake for 30 minutes or until the edges are golden brown and middle is set.
Let bars fully cool to room temperature before frosting.
Buttercream
With an electric mixer or stand mixer whisk butter on medium high speed for 4 minutes.
Add in the powdered sugar 1 cup at a time, mixing on medium speed in between each added cup. Mix till well combined.
Add in heavy cream, food colouring, and vanilla extract.
Mix for 5 minutes on high speed until smooth and fluffy.

Add and smooth the buttercream on top of the cooled bars. Top with extra sprinkles.

STORING THE Blondies
Store the bars in an airtight container in the refrigerator. The blondies stay good for up to five days if stored properly.
WHAT KIND OF SPRINKLES SHOULD I USE?
You can use any type of sprinkles you like. I personally prefer jimmies, these are the long sprinkles.
WHAT DOES SPOONED AND LEVELLED FLOUR MEAN?
Spooned and levelled flour refers to the way of measuring flour. To properly measure flour you should scoop spoonfuls of flour into your measuring cup and then scrape with a knife to level off the access. Scooping the measuring cup directly into your flour cause the flour to compress and getting more than the recipe calls for.
DO I NEED TO BRING MY EGGS TO ROOM TEMPERATURE?
Yes you do. Room temperature ingredients break down easier in the batter. This will give you a chewier bar.
If you forget to take your eggs out of the fridge, no worries! Just run them under warm tap water for a few minutes and this will bring them to room temperature.
