Pumpkin patch brownie bites are perfect for Halloween. A chewy bite sized brownie, topped with chocolate ganache, oreo crumbs, and a pumpkin candy.
I can not get over how cute these brownie bites are! They were a huge hit with my kids and I have been putting one in my son's school lunch for the last couple days. Best of all not only are they cute but they taste so good!

Easy to make. I know there are a lot of steps, but I promise the recipe is easy to follow and create!

How To Make Them
Preheat oven to 350F and grease mini muffin pan with spray or cooking oil.
Brownie Batter
Chop the bakers chocolate and microwave in 15 second increments, stirring in between, until melted. Set aside.
In a large mixing bowl combine melted butter and sugar. Whisk by hand until smooth. Add in the eggs and vanilla and continue to mix. Whisk vigorously, by hand, for a good 3 minutes. Well whisked eggs is what gives these brownies that shinny crackled top.

Pour in the melted chocolate and whisk until mixture is well combined.

Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients just until combined. Do not over mix.

Fold in the chocolate chips. Scoop 1.5 tablespoons worth of batter into each muffin tin. I like to use a small cookie scoop. Once all tins are filled, hit the pan a few times on the counter to help spread the batter.

Cook brownies for 11-13 minutes or until the tops are shiny. You don't want to over bake. Let the brownie bites cool in the pan until they are room temperature. Gently run a knife around the edges to pop them out.
Chocolate Ganache
Once the brownie bites are completely cooled its time to make the ganache. In a medium sized microwave safe bowl add the chocolate chips, set aside. In another microwave safe bowl add the heavy cream and heat till just before boiling, (about 45 seconds).
Pour the heated cream over the chocolate chips and let sit for a minute. Mix chocolate and cream together. If there are still chunks of chocolate in the microwave for a few seconds and stir again. The ganache should be completely smooth.
Decorating
Set all your decorating ingredients out to make the process easier.

Evenly spoon the ganache over the tops of each brownie. Sprinkle some oreo crumbs on top of the ganache. Finish by adding a pumpkin candy on top, gently pushing it into the ganache.

Storing
These brownie bites should be stored at room temperature in an airtight container and keep well up to four days after baking.
Can I Make Brownie Bars Instead?
Yes, you definitely can! Follow the brownie recipe the same except bake in an 8x8 square baking pan for 30 minutes. When decorating spread the ganache over top of the brownies, sprinkle with the oreo crumbs, and add the pumpkins on top. Let the ganache sit till stiff then cut with a sharp knife into 16 bars.
Can I Freeze Them?
No, unfortunately you can not freeze these brownie bites.
What type of Pumpkin Candies Should I Use?
You can use any small pumpkin candy you like. I love the ones that taste like candy corn! I know others are not a fan of the taste. You can use gummy or even small chocolate pumpkins!
