These strawberry oatmeal bars uses simple ingredients to create a delicious and somewhat healthy (compared to other desserts) treat. It's made up of an oatmeal crumb base, soft strawberry middle, and a crumb top. It works great as a snack, treat, or quick on the go breakfast.

How to Make Strawberry Oatmeal Bars
Start by preheating the oven to 375 F and line a square 8x8 pan with parchment paper.
Next, wash and dice your strawberries and set aside in a medium sized mixing bowl.
In a large bowl whisk together the rolled oats, brown sugar, flour, and cinnamon. Add the melted butter into the dry ingredients and mix till everything is combined. It will have crumbly texture.

Set aside 1/2 C of crumb mixture and pour the rest into your pan. Press the crumb mixture down with your hands so it forms a solid crust. Make sure to evenly spread it across the bottom of the pan.

Next the strawberries. To the diced strawberries add in the white sugar, juice, and cornstarch. Mix until all dry ingredients are dissolved. Spread the strawberry mixture over the crumb base in your pan.

Top with the remaining 1/2 of crumb mixture you set aside. You just want to sprinkle it above the strawberries.

Bake for 28 minutes or until top and edges are golden brown. Let fully cool in the pan before cutting into bars. You can cut them into either 9 large bars or 16 smaller ones.

How to Store the Bars
These bars should be stored in an airtight container at room temperature. They keep well for three days after baking.
WHAT DOES SPOONED AND LEVELLED FLOUR MEAN?
Spooned and levelled flour refers to the way of measuring flour. To properly measure flour you should scoop spoonfuls of flour into your measuring cup and then level off the access by scraping with a knife. Scooping the measuring cup directly into your flour causes the flour to compress and you will get more flour than the recipe calls for.
What Kind of Oats Should I use?
You want to use rolled oats, sometimes called old fashioned oats. Using quick oats will not give the bars the correct texture .
Can I use Frozen Strawberries?
You want to use fresh strawberries for this recipe. If you only have frozen berries you will want to bring them to room temperature before using them.

- 3/4 C salted butter melted
Instructions
