How to Make These Blondies

Crush 15 oreos into medium sized chunks and set aside. I like to do this by placing them in a large zip lock bag and crushing them with a rolling pin.

Preheat oven to 350 F and line a 8×8 square baking pan with parchment paper.

In a large bowl beat softened butter and sugar until light an fluffy, this usually takes 2-3 minutes. Add in egg, egg yolk, and vanilla extract and mix until well combined. Add in flour and salt and mix until combined. Fold in the crushed oreos.

Once everything is combined pour the batter into your lined baking pan. Smooth and spread the mixture till it is evenly covers the entire pan. Break apart another 4 oreos in a few different sized chunks and place them on top of the batter. Slightly push them in so they stay in place.

Bake for 25-28 minutes or until the edges are golden brown and middle is set. Let blondies fully cool in the pan before slicing.

WHAT DOES SPOONED AND LEVELLED FLOUR MEAN?

Spooned and levelled flour refers to the way of measuring flour. To properly measure flour you should scoop spoonfuls of flour into your measuring cup and then level off the access by scrape with knife. Scooping the measuring cup directly into your flour cause the flour to compress and getting more flour than the recipe calls for.

DO I NEED TO BRING MY EGGS TO ROOM TEMPERATURE?

Yes you do. Room temperature ingredients break down easier in the batter. This will give you a fudgier blondie and gives you a shiny top.

If you forget to take your eggs out of the fridge, no worries! Just run them under warm tap water for a few minutes and this will bring them to room temperature.

Storing the Blondies

These blondies should be stored in an airtight container at room temperature. If properly stored they should stay good up to four days.

Chewy Caramel Turtle Brownies

Chewy Caramel Turtle Brownies

The best chewy caramel turtle brownies! A decadent brownie full of chewy caramel pieces and pecans baked inside. Topped with caramel sauce, chocolate, and pecans. If you love Turtles Chocolate these brownies will be perfect for you!

I made these brownies with the help of my two young children. Brownies seem to be their favourite thing to bake, I believe it’s because of all the chocolate! I recently was able to bring them to a small family get together, one of the first since Covid. These brownies were a huge hit! Making turtle brownies is definitely a way to upgrade plain brownies into a decadent dessert!

How to Make These Turtle Brownies

Preheat oven to 350F and line a 8×8 inch square baking pan with parchment paper. You want to make sure the parchment overs hangs a little, this allows you to easily remove the brownies from the pan.

Brownie Batter

Chop and melt the bakers chocolate in the microwave. Do this by microwaving in 20 second increments and stirring in between.

Chop caramel squares into small pieces, I find its easiest to cut them with kitchen scissors.Add caramel pieces, chocolate chips, and pecans into a medium sized bowl. Mix together and then set bowl aside.

In a large mixing bowl combine melted butter and sugar and whisk by hand until smooth. Add in the eggs and vanilla and vigorously mix for a few minutes. Mixing the eggs well creates that shiny crackle top on the brownies.

Bake for 28-30 minutes or until edges are stiff and middle is set. Allow brownies to fully cool to room temperature before adding the toppings and slicing.

Caramel Sauce

In a medium sized microwave bowl add the caramel squares and heavy cream. Microwave in 20 second increments, stirring in between, until melted and combined.

Drizzle the caramel on top of the cooled brownies. Then top with chocolate chips and pecans. I then like to drizzle a little more caramel sauce on top.

Tips for Making Perfect Turtle Brownies

  • Use room temperature eggs. They break down easier and allow them to blend better into the batter.
  • If you forgot to take your eggs out of the fridge, no worries, just run them under warm water for a few minutes.
  • Once eggs are added to the mixture, whisk for a couple of minutes. This breaks down the eggs, adds air, and gives the brownies that perfect crinkle top.
  • Be sure to mix everything by hand.
  • It’s better to be under baked than over baked with brownies.

Can I Leave out the Buttermilk?

Yes, you can omit the buttermilk if you don’t have it. Traditionally red velvet is made with vinegar but I prefer buttermilk because it’s not so overpowering. You can leave the buttermilk out, it just wont have that classic red velvet taste. I have left it out and they are still delicious!
