Pumpkin Swirl Cheesecake Bars

These pumpkin swirl cheesecake bars are easy to make and have the perfect soft and creamy cheesecake texture. Pumpkin and vanilla cheesecake swirled together atop a graham cracker crust. It tastes like pumpkin pie in cheesecake form! This recipe definitely should be on your fall baking list.

Cheesecake are one of my favourite desserts! So of course I had to make some cheesecakes for fall themed baking! What I love about cheesecake bars is they’re easier to make than a traditional large round cheesecake. There is no need for a water bath and no risk of developing large cracks.

How to Make These Cheesecake Bars

Preheat oven to 325 F and line a square 8×8 baking pan with parchment paper. Make sure the paper slightly overhangs on the sides. This will allow you to easily remove the cheesecake from the pan.

Making The Crust

In a medium sized bowl mix the graham cracker crumbs, brown sugar, and melted butter together until well combined. The mixture will have the texture of wet sand.

Add the crumb mixture into your lined baking pan and using your hands or bottom of a measuring cup press and smooth the crumbs together evenly over the bottom of the pan. Bake crust in the oven for 9 minutes. After remove and let cool to room temperature.

MAKING THE CHEESECAKE BATTER

Using your stand mixer or hand held mixing beat cream cheese in a large bowl until smooth, this takes about 3 minutes. Add in the sugar, salt, heavy cream, and vanilla extract. Mix on medium speed until well combined. Scraping down the bowl as needed. Add in the two eggs and mix just till combined on a low speed.

Scoop out 1 cup worth of the vanilla cheesecake batter and set aside.

To the large bowl add in the pumpkin puree and pumpkin spice and mix on a low speed until combined.

Assembling The Cheesecake Bars

Add half the pumpkin cheesecake batter over top of the graham cracker curst. Spreading it evenly. Spoon dollops of the vanilla cheesecake on top. Then add on the remaining pumpkin cheesecake on top. Lastly, add more spoonfuls of the vanilla cheesecake on top.

Next, take a butter knife and gently trace lines horizontally and then vertically. This will give your cheesecake the swirled marble effect.

Bake cheesecake for 40-45 minutes or until edges are stiff and the middle is just a little jiggly. Remove pan from the oven and let fully cool to room temperature.

Once at room temperature, move the cheesecake into the fridge. Let chill in the fridge for at least 4 hours or over night.

Serving The Cheesecake Bars

To serve, remove the chilled cheesecake from the fridge. Gently lift it from the pan using the overhanging parchment. Use a sharp knife to slice, be sure to wipe down the knife after each cut to get a clean cut.

STORING THE CHEESECAKE

Cheesecake should be stored in the fridge. The cheesecake will stay good up to three days after baking.

  • Once at room temperature, move the cheesecake into the fridge. Let chill in the fridge for at least 4 hours or over night.

Banana Blondies with Brown Butter Frosting

Banana blondies with brown butter frosting are chewy, soft, and easy to make. The blondies have a banana bread taste which pairs so well with the brown butter frosting.

What I love most about this recipe, besides that they taste amazing, is how they use up a ripe banana. I don’t know about you but we always have some ripe bananas hanging around the house. This recipe use just one, compared to most banana muffins or bread recipes that use 3. This dessert comes together so easily and I’m sure will become your new go to for getting rid of those over ripe bananas.

I made this recipe with the help of my two young children. Lots of mashing, pouring, and mixing makes this recipe perfect to make with little helpers.

What is Brown Butter Frosting?

Just like the name sounds it is a simple frosting made up of brown butter. You get brown butter by slowly cooking the butter on the stove over medium heat until it reaches an amber colour. Cooking the butter gives it an amazing nutty sweet flavour. If you’ve never tried it, it’s easy to do and is really an amazing flavour. After the butter is browned you simply mix in the icing sugar, vanilla, and mix till smooth.

How to Make Banana Blondies

Preheat oven to 350F and line an 9×9 or 8×8 square baking dish with parchment paper

Banana Blondie Batter

In a large bowl whisk melted butter and brown sugar together. Add in the egg and vanilla extract and whisk till well combined. Add in the mashed banana and mix again.

In a separate medium sized bowl whisk flour, cinnamon, and salt together. Add the dry ingredients to the wet and use a rubber spatula to mix together. Mix just until no flour streaks remain.

Pour the batter into the lined pan and bake for 20 minutes or until the edges are just starting to turn a golden brown. Let the blondies cool completely in the pan before adding the frosting.

Brown Butter Frosting

In a small pot, over medium heat, add the butter. Cook the butter until it turns an amber brown colour, stirring occasionally. After the butter is browned remove from heat and let cool for 10 minutes.

Add the the icing sugar and vanilla extract and mix until smooth. Add the frosting on top of the cooled blondies and spread smooth. Let the frosting cool and competently set before slicing.

If you’re a peanut butter dessert lover than these cookie bars are for you! These Reese’s Pieces Peanut Butter Cookie Bars are amazing! They have the perfect chewy texture, an incredible peanut butter flavour, and loaded with mini Reese’s Pieces.

Best of all they are so easy to make! I made them with the help of my two toddlers recently. I used to be nervous baking with peanut butter around my toddlers. Most of the time I ended up with peanut butter all over my cupboards and floor. They are starting to get much better with keeping their fingers out of the bowl. They also really love the mini Reese’s Pieces! I had to put some in a separate bowl for them so they would stop picking it off the top of the cookie dough.

Difference Between Cookies and Cookie Bars?

The difference between cookies and cookie bars is not only the obvious shape difference but texture. Cookie bars are chewier. Since most of the bars do not have an edge and are thicker than cookies the texture is more fudgy.

Reese's Pieces Peanut Butter Cookie Bars

How to Make Reese’s Pieces Peanut Butter Cookie Bars

Start by preheating your oven to 350 F and line a 9×13 inch baking pan with parchment paper. It is important to line the pan with parchment paper rather than butter for two reasons. The first is that using butter/oil will give these bars a greasy bottom. Secondly, using parchment paper allows you to easily lift the bars out of the pan to make cutting them easier.

In a large bowl or stand mixer beat butter, white sugar, and brown sugar until light and fluffy (usually takes 2-3 minutes). Add in peanut butter and mix until ingredients are well combined. Mix in eggs and vanilla.

In a separate medium sized bowl whisk together flour, baking soda, and salt. Add the dry ingredients to the wet and mix just until no flour streaks remain. Fold in the mini Reese’s Pieces but keep about 1/4 cup aside to place on top of the cookie dough once in the pan.

Add the dough into the baking pan and use a rubber spatula to evenly spread it. Sprinkle the reaming Reese’s Pieces on top of the dough.
