I can not get over how cute these brownie bites are! They were a huge hit with my kids and I have been putting one in my son’s school lunch for the last couple days. Best of all not only are they cute but they taste so good!

Why You’ll Love These Brownie Bites

Appearance. This little brownie bites are so cute! First off, who doesn’t love mini desserts let alone ones that look like a pumpkin patch!

Perfect for Halloween. These are perfect for Halloween parties and Halloween treats.

Amazing taste. The brownie bites taste so good! They a perfect chewy texture and full of chocolate chips. The chocolate ganache and oreo cookie crumbs add to the chocolate flavour.

Easy to make. I know there are a lot of steps, but I promise the recipe is easy to follow and create!

How To Make Them

Preheat oven to 350F and grease mini muffin pan with spray or cooking oil.

Brownie Batter

Chop the bakers chocolate and microwave in 15 second increments, stirring in between, until melted. Set aside.

In a large mixing bowl combine melted butter and sugar. Whisk by hand until smooth. Add in the eggs and vanilla and continue to mix. Whisk vigorously, by hand, for a good 3 minutes. Well whisked eggs is what gives these brownies that shinny crackled top.

Pour in the melted chocolate and whisk until mixture is well combined.

Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients just until combined. Do not over mix.

Fold in the chocolate chips. Scoop 1.5 tablespoons worth of batter into each muffin tin. I like to use a small cookie scoop. Once all tins are filled, hit the pan a few times on the counter to help spread the batter.

Cook brownies for 11-13 minutes or until the tops are shiny. You don’t want to over bake. Let the brownie bites cool in the pan until they are room temperature. Gently run a knife around the edges to pop them out.

Chocolate Ganache

Once the brownie bites are completely cooled its time to make the ganache. In a medium sized microwave safe bowl add the chocolate chips, set aside. In another microwave safe bowl add the heavy cream and heat till just before boiling, (about 45 seconds).

Pour the heated cream over the chocolate chips and let sit for a minute. Mix chocolate and cream together. If there are still chunks of chocolate in the microwave for a few seconds and stir again. The ganache should be completely smooth.

Decorating

Set all your decorating ingredients out to make the process easier.

Evenly spoon the ganache over the tops of each brownie. Sprinkle some oreo crumbs on top of the ganache. Finish by adding a pumpkin candy on top, gently pushing it into the ganache.

Storing

These brownie bites should be stored at room temperature in an airtight container and keep well up to four days after baking.

Can I Make Brownie Bars Instead?

Yes, you definitely can! Follow the brownie recipe the same except bake in an 8×8 square baking pan for 30 minutes. When decorating spread the ganache over top of the brownies, sprinkle with the oreo crumbs, and add the pumpkins on top. Let the ganache sit till stiff then cut with a sharp knife into 16 bars.

Can I Freeze Them?

No, unfortunately you can not freeze these brownie bites.

What type of Pumpkin Candies Should I Use?

You can use any small pumpkin candy you like. I love the ones that taste like candy corn! I know others are not a fan of the taste. You can use gummy or even small chocolate pumpkins!

Who doesn’t love those Two Bite Brownies!? Did you know that they’re super easy to make from home? They take less time to bake than regular brownies and are even more tasty than the store bought version.

My two young children love baking brownies, I think it’s because of all the chocolate. My little ones loved how “cute” these chewy brownie bites were.

How to Make Brownie Bites

Tips for Perfect Brownie Bites

  • Use room temperature eggs. They break down easier and allow them to blend better into the batter.
  • If you forgot to take your eggs out of the fridge, no worries, just run them under warm water for a few minutes.
  • Once eggs are added to the mixture, whisk for a couple of minutes. This breaks down the eggs, adds air, and gives the brownies that perfect crinkle top.
  • When the dry ingredients are added mix just until there are no longer any flour streaks. Over mixing will cause the brownies to be dense and dry.
  • It’s better to be under baked than over baked with brownies.

This year we are pumping out the Valentines day themed treats starting with these Brownie Hearts. There made up of a delicious and fudgy brownie that I cut into a heart shape and drizzle with white chocolate that I dyed pink. The recipe is so easy to do and creates a beautiful treat!

I did a variety of sizes of hearts to use up all the brownies. My daughter had a great time decorating these too! I did mine first and saved a bunch of littles ones for her. She ended up using all the remaining chocolate on just three small hearts. It was chocolate overload, but it was so nice seeing her enjoy herself and I can not wait to make these again!

Valentines Day was a holiday I never really cared to celebrate. However, now that I am a Mom I get excited for all the holidays! This now includes Valentines Day. There is something so special about seeing a holiday through your children’s eyes. So, although I still think it is a silly holiday we will be celebrating.

How to Make Brownie Hearts

Brownie Batter

Start by preheating your oven to 350F and line a 9×9 baking pan with parchment paper. The parchment paper should over hang on the edges slightly to allow you to easily remove the brownies from the pan.

Chop the bakers chocolate and place in a microwave safe bowl. Melt in the microwave by stopping and stirring the chocolate in 20 second increments.

In a large mixing bowl combine melted butter and sugar and whisk by hand until smooth. Add in the eggs and vanilla and continue to mix. You want the mixture to be very smooth and have no lumps.

Pour in the melted chocolate and whisk until mixture is well combined. Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients until combined. Do not over mix.

Fold in the chocolate chips. Pour batter into the lined pan and spread evenly. Bake for 27 minutes or until the top is set. You do not want to over bake the brownies. Allow brownies to fully cool to room temperature before decorating.

Decorating

Once the brownies have fully cooled remove them from the pan by pulling on the parchment paper. Place them on the counter. Use heart shaped cookie cutter to cut out your hearts. I like to use a variety of sizes. Start with your largest size first and then go in with the smaller sizes in the spaces you have left over.

After the brownies hearts are shaped it’s time for the chocolate drizzle. In a microwave safe bowl add the white chocolate chips. Melt in the microwave by stopping and stirring the chocolate in 20 second increments. After fully melted stir in a drop or two of pink food colouring and mix it in.

Pour the melted chocolate into a ziplock bag and make a small sized cut in the corner. Drizzle the chocolate over the heart brownies. Allow chocolate to fully set before serving or storing the brownies.

Bake them on your own or bake them with your kids, either way I’m sure you’ll love with these Brownie Hearts!
