How to Make The Cookies

Preheat oven to 350 F and line baking sheets with parchment paper.

Cut your caramel squares into small pieces. I find using kitchen scissors is the easiest method. Place 10 cut caramels in one bowl, and five cut caramels in another (these will be for topping the cookies. Set both bowls aside.

In a large bowl or stand mixer cream together butter and sugars until light and fluffy. You want to do this for a good 3 minutes. Add in vanilla, egg, and egg yolk. Beat until mixture is well combined.

In a second bowl whisk together flour, baking soda, and salt. Add dry ingredients into wet and mix until just combined.

Using a rubber spatula, fold in the chocolate chips and caramel pieces.

Scoop 3 tbsp sized balls of cookie dough and place on the lined baking sheet 2 inches apart. Top the cookies with the extra caramel pieces and extra chocolate chips.

Bake for 11-12 minutes or until cookies are golden brown on the edges. These cookies spread, to get the perfect round cookie shape as soon as the cookie come out of the oven take a round cookie cutter, (slightly large than the cookies) place it around the cookie and gently swirl it around.

Let the cookies cool on the cookie sheet after baking. Enjoy!

Storing the Cookies

These cookies should be stored in an airtight container at room temperature. The cookies keep well up to four days.

How to Get Round Cookies

As soon as the baked cookies are pulled from the oven place a round cookie cutter (a little bit large than the cookies) around the cookies and gently swirl it around. This will give your cookie a round shape. If you don’t have a cookie cutter you can use a glass or a jar lid.

Can I Make the Cookies Smaller?

Yes, you can the cookies smaller. Instead scoop 1.5 tbsp worth of dough and bake for 8-9 minutes.

Baking Instructions

Start by preheating the oven to 350 F and lining baking trays with parchment paper.

Sugar Cookie Base

In a large bowl or in a stand mixer with the paddle attachment on beat butter and white sugar together until light and fluffy. This usually takes about 3 minutes. Add in the egg and vanilla and mix till well incorporated.

In a separate large bowl whisk flour, baking soda, baking powder, and salt. Pour the dry ingredients into the wet and mix till combined. Scoop 3 tbsp worth of dough into a ball and place on the baking trays 2 inches apart.

Bake cookies for 9-11 minutes or until bottoms are golden brown. Let cookies cool on the pan.

Caramel Sauce

Let cookies fully cool to room temperature before adding the caramel sauce and chocolate.

In a medium sized microwave safe bowl, add the unwrapped caramel squares and heavy cream. Heat in the microwave in 20 second increments, stirring in between, until smooth.

Evenly divide the caramel sauce over the cookies. Spoon the sauce in the centre of each cookie and spread, making sure to not spread over the edge. Work fast because the sauce does harden quickly.

Chocolate Ganache

After the caramel is on the cookies let them sit in the fridge for a few minutes while you make the ganache.

In a medium sized microwave safe bowl add the chocolate chips, set aside. In another microwave safe bowl add the heavy cream and heat till just before boiling, (about 30 seconds).

Pour the heated cream over the chocolate chips and let sit for a few minutes. Mix chocolate and cream together. If there are still chunks of chocolate in the microwave for a few seconds and stir again. The ganache should be completely smooth. Evenly spoon and smooth the ganache over the caramel layer of each cookie.

Let cookie sit in the fridge for a few minutes to stiffen the ganache before enjoying.

Storing The Cookies

These cookies should be stored in an airtight container in the fridge. You can keep them at room temperature but the ganache will melt in a warm house. When storing in the fridge be sure to bring cookies to room temperature before enjoying.

Can I Make the Cookies Smaller?

Yes, you can definitely make the cookies smaller. Instead, scoop 1.5 tablespoons worth of cookie dough and bake for 7-8 minutes. The amount of caramel sauce and chocolate ganache stay the same.

I made these brownies with the help of my two young children. Brownies seem to be their favourite thing to bake, I believe it’s because of all the chocolate! I recently was able to bring them to a small family get together, one of the first since Covid. These brownies were a huge hit! Making turtle brownies is definitely a way to upgrade plain brownies into a decadent dessert!

How to Make These Turtle Brownies

Preheat oven to 350F and line a 8×8 inch square baking pan with parchment paper. You want to make sure the parchment overs hangs a little, this allows you to easily remove the brownies from the pan.

Brownie Batter

Chop and melt the bakers chocolate in the microwave. Do this by microwaving in 20 second increments and stirring in between.

Chop caramel squares into small pieces, I find its easiest to cut them with kitchen scissors.Add caramel pieces, chocolate chips, and pecans into a medium sized bowl. Mix together and then set bowl aside.

In a large mixing bowl combine melted butter and sugar and whisk by hand until smooth. Add in the eggs and vanilla and vigorously mix for a few minutes. Mixing the eggs well creates that shiny crackle top on the brownies.

Pour in the melted chocolate and whisk until mixture is well combined. Sift in the flour, cocoa powder, and salt. Using a rubber spatula mix the dry ingredients into the wet ingredients until combined. Do not over mix.

Fold in the mixture of caramel pieces, chocolate chips, and pecans. Pour batter into the lined pan and spread evenly.

Bake for 28-30 minutes or until edges are stiff and middle is set. Allow brownies to fully cool to room temperature before adding the toppings and slicing.

Caramel Sauce

In a medium sized microwave bowl add the caramel squares and heavy cream. Microwave in 20 second increments, stirring in between, until melted and combined.

Drizzle the caramel on top of the cooled brownies. Then top with chocolate chips and pecans. I then like to drizzle a little more caramel sauce on top.

Tips for Making Perfect Turtle Brownies

  • Use room temperature eggs. They break down easier and allow them to blend better into the batter.
  • If you forgot to take your eggs out of the fridge, no worries, just run them under warm water for a few minutes.
  • Once eggs are added to the mixture, whisk for a couple of minutes. This breaks down the eggs, adds air, and gives the brownies that perfect crinkle top.
  • Be sure to mix everything by hand.
  • It’s better to be under baked than over baked with brownies.
