The added flavour an texture of the chopped pecans are marvellous in this bread. Those of you that have been following me for a while know that I am obsessed with crunchy streusel toppings! So too add even more to this banana nut bread I added a pecan streusel on top.

Easy. I love how easy this recipe is and everything is done by hand!

Tastes amazing. This banana bread tastes so good and has a perfect soft and moist texture.

Streusel topping. The crunchy pecan streusel is what takes this banana bread to the next level. It’s sweet, crunchy, and adds such a nice flavour!

Step By Step Instructions

Preheat oven to 350 F. Grease loaf pan and line bottom and long edges with parchment paper. You want the parchment paper sides to overhang, this allows you to easily remove the bread.

Crunchy Streusel Topping

In a medium sized bowl mix together flour, white sugar, cinnamon, 1/3 cup chopped pecans and melted butter. Mix until well combined, it should have a crumbly texture. Set aside. It’s important to make the topping first because the longer it sits out the crumblier the texture becomes.

Banana Bread Batter

In a large bowl cream butter and sugar together. Add in beaten egg and mashed bananas. Mix until well combined.

Add salt, baking soda, and chopped pecans; mix till well combined. Add in flour and mix just till combined.

Pour batter into the loaf pan and add the streusel on top. Slightly pat the topping into the batter.

Bake for 55-60 minutes or until a toothpick inserted into the middle comes out clean. Cool in the pan for 10 minutes before removing. It’s best to wait until fully cooled before slicing.

WHAT DOES SPOONED AND LEVELLED FLOUR MEAN?

Spooned and levelled flour refers to the way of measuring flour. To properly measure flour you should scoop spoonfuls of flour into your measuring cup and then level off the access by scraping with a knife. Scooping the measuring cup directly into your flour causes the flour to compress and you will get more flour than the recipe calls for.

STORING THE BANANA BREAD

I love to eat banana bread while still warm but you can store it at room temperature for four days.

Ingredients
  

Banana Bread Batter

  • 3 large ripe bananas mashed
  • 1/4 C salted butter at room temperature
  • 1 C white sugar
  • 1 large egg beaten
  • 1 & 1/2 C all purpose flour *spooned and levelled
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 C chopped pecans

Crunchy Streusel Topping

  • 1/4 C salted butter melted
  • 1/2 C all purpose flour
  • 1/4 C white sugar
  • 1/4 tsp ground cinnamon
  • 1/3 C chopped pecans

The recipe is so easy to make. One thing you want to be careful of is to add pumpkin puree not pumpkin pie filling. You can find pumpkin puree in the baking aisle at the grocery store it is unsweetened and does not contain spices.

This bread is great fresh out of the oven but I find it tastes even better the second day!

Isn’t it funny how 15C in April seems so hot and 15C in September feels so cold? It is definitely starting to feeling like Fall in Ontario. I made this Pumpkin Bread with Streusel last week but have been incredibly busy and finally getting time to write it up now. We had brought this bread up to the cottage to share with our family and they all agreed it was wonderful.

My two toddlers have been having an off day and nothing at home seemed to make them happy. So we went on a walk to our neighbourhood Tim Hortons, got some timbits and a pumpkin spice latte for mama. The weather sure felt like Fall; grey, slightly chilling, and mist in the air. My kids didn’t seem to mind at all. After finishing our walk they ate their timbits and went went down for a nap. I now get to enjoy my PSL in peace.

How To Make the Pumpkin Bread

Preheat oven to oven to 350F. Grease and line a loaf pan with parchment paper. You wan to make sure the parchment paper hangs out a bit around the long edges so the loaf so you can easily remove the bread.

Pumpkin Bread Batter

In a medium sized bowl whisk together flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt. Set aside.

In a large sized bowl combine the eggs, brown sugar, white sugar, oil, pumpkin puree, vanilla extract, and milk. Be sure the ingredients are mixed well.

Add the dry ingredients into the wet and fold together using a rubber spatula. You want to be careful not to over mix. Once you can no longer see any flour stop mixing. Pour batter into your lined loaf pan.

Streusel Topping

In a medium sized bowl whisk together white sugar, brown sugar, flour, and cinnamon. Once blended add in the melted butter and mix until a crumble texture is formed.

Add the streusel topping on top of the loaf batter. Bake for 65 minutes or until a toothpick inserted into the centre of the bread comes out clean. Allow loaf to cool to room temperature before removing it from the pan.

Storing the Bread

This bread keeps amazingly, I find it’s even tastier on the second day! Bread should be kept at room temperature in an airtight container, wrapped in plastic wrap, or (my favourite way to store things) in a large zip lock bag. Bread keep well for 3 days after baking.

  • 3 tbsp white sugar
  • 5 tbsp salted butter melted
