Caramel Stuffed Ginger Cookies

Caramel stuffed ginger cookies are chewy, warmly spiced, made with molasses, and stuffed with caramel. These easy to make cookies are perfect for fall and winter baking.


– all purpose flour  – ground ginger – baking soda – ground cinnamon – ground cloves – salt –  salted butter  – white sugar –  egg – water – fancy molasses – caramel squares

These cookies are warmly spiced and full of flavour.  These cookies are perfectly chewy and soft. Stuffed with caramel.

Cream together the butter and sugar. Followed by the egg, water, and molasses.  


In another bowl whisk together the dry ingredients. Add to the wet and combine.  Cover and chill for 2 hours. 

Scoop dough and stuff with a caramel. Roll into a ball. Place in tray 2 inches apart. Bake for 11 minutes.
