 Pumpkin  Cheesecake Cookies

Pumpkin cheesecake cookies are a chewy pumpkin cookie, filled with cheesecake, and covered in a pumpkin spiced sugar.  


– pumpkin puree  – salted butter – brown sugar – white sugar – vanilla extract – egg yolks – all purpose flour – baking soda – baking powder – salt – pumpkin pie spice –ground cinnamon – cream cheese

These cookies are CHEWY not cakey and have crisp edges. Stuffed with a sweet cheesecake filling. Tastes like pumpkin cheesecake in cookie form.

Make the cheesecake filling by creaming the cream cheese, sugar, and vanilla together. Scoop into balls and freeze.   


In a large bowl cream together wet ingredients.  Whisk together the dry and add to the wet. 

Scoop into 3 tbsp sized balls. Add the cheesecake ball in the centre. Cover with dough.  Roll in the spiced sugar.  Bake for 12 minutes.
