Pumpkin Swirl Cheesecake Bars

These pumpkin swirl cheesecake bars are easy to make and have the perfect soft cheesecake texture. Pumpkin and vanilla cheesecake swirled together atop a graham cracker crust.


– salted butter  – graham cracker crumbs – brown sugar – full fat cream cheese  – white sugar – eggs – heavy cream  – vanilla extract –  pumpkin puree – pumpkin pie spice

They taste like pumpkin pie in cheesecake form.  They have a creamy texture.  No water bath is needed.

Assemble the crust and add to a square pan. Mix the cream cheese, eggs, vanilla, and sugar together. Take out 1 cup of vanilla batter, set aside. Add the pumpkin puree and spice to the remaining batter. 


Add half of the pumpkin cheesecake batter on top. Add spoonfuls have half of the vanilla batter on top. Repeat with the remaining amounts. 

Take a knife and gently swirl the batter around.  Bake for 40 minutes. Cool to room temperature and then chill for 4 hours.
